Prawn & herb salad rolls

There's something totally Summer-in-Australia about a prawn roll (that's "shrimp" to any US visitors) - it's a summer favorite in many coastal centres.

Combining the protein in prawns with the vitamins and minerals in lettuce and avocado, plus the "good" fat in avocado, makes the snack a great way to add nutrition to your day as well as enjoyment!

This recipe serves 4.


1/4 cup whole egg mayonnaise

1/4 cup of lime juice

4 Sour dough bread rolls

Green oak lettuce leaves

2/3 cup of fresh mixed herb leaves (eg: coriander, dill, mint or chives)

1 peeled and sliced avocado

20 peeled and de-veined king prawns.


Combine the mayonnaise and lime juice together

Cut the sourdough rolls without splitting right through

Spread the mayonnaise/lime mix on the bread roll

Add the green oak lettuce leaves, fresh herbs, avocado and prawns

Drizzle with mayonnaise sauce and serve.

Options: replace prawns with smoked salmon/tinned salmon or tuna.
