Peanut butter cookies

Kids (and adults) will love these - they are a perennial favourite in lunchboxes!

If serving in company, be aware that some people are allergic to nuts, so make sure everyone knows what these treats contain.

Ingredients

125 grams margarine

150 grams brown sugar

125 grams crunchy peanut butter

1 egg lightly beaten

150 grams plain flour

1/2 teaspoon baking powder

125 grams unsalted peanuts

Method

Beat the butter and sugar together in a mixing bowl until pale and creamy.

Add the peanut butter, egg, flour, and baking powder and stir together until combined.

Stir in the peanuts.

Drop large teaspoonfuls of the mixture onto large, lightly oiled baking sheets, leaving 5 cm gaps between each to allow them to spread whilst cooking.

Flatten the mounds slightly and bake in a preheated oven 190C for 12minutes until golden around the edges.

Leave to cool on the baking sheets for 2 mins and then transfer to a wire rack to cool.


Alternative: Peanut butter and chocolate chip cookies

Use only 50 grams unsalted peanuts and add 50 grams of milk chocolate chips.
