Power bars

Need a mid-morning or mid-afternoon boost that is easy to eat on-the-go? Here's the answer!

Ingredients

200 grams margarine

150 grams light brown sugar

4 tablespoons golden syrup

100 grams mixed seeds ( sesame, sunflower, pumpkin, hemp and light and dark linseeds, chia)

50 grams unblanched almonds

50 grams hazelnuts

1 apple cored, diced but not peeled

1 small banana, peeled and roughly mashed

200 grams porridge oats

Method

Put the margarine, sugar and syrup in a saucepan and gently heat gently until just melted.

Remove the pan from the heat and stir in all remaining ingredients.

Tip the mixture into a 18x28 cm baking tin lined with non stick baking paper, and press into an even layer.

Bake in a preheated oven 180C for 25-30 minutes until golden brown and just beginning to darken around the edges.

Leave to cool for 10 minutes, then mark into 16 bars and leave to cool completely.

Lift the paper out of the tin, cut the bars right through and peel off the paper.

Store in an airtight contained for up to three days.
