Healthy crumbed fish tenders

Looking for a delicious, healthy snack for the family? This fits the bill perfectly... and looks like "fast food" too!

Ingredients

1 cup of plain flour in a bowl.

2 eggs lightly beaten in a bowl.

1.5 cups of wholemeal breadcrumbs.

500 grams ling fillets.

Method

Preheat oven to 200 C, Line the baking tray with baking paper.

Cut the fish along its length to strip/tender size.

Drop the fish in the flour, followed by egg and then bread crumbs.

Shaking off excess crumbs, lay the ling tenders on the tray and spray lightly with a oil spray.

Bake for 15-20mins until golden brown and cooked.

Serve with wedges of lemon.
