Healthy crumbed fish tenders

Looking for a delicious, healthy snack for the family? This fits the bill perfectly… and looks like “fast food” too!
Ingredients
1 cup of plain flour in a bowl.
2 eggs lightly beaten in a bowl.
1.5 cups of wholemeal breadcrumbs.
500 grams ling fillets.
Method
Preheat oven to 200 C.
Line the baking tray with baking paper.
Cut the fish along its length to strip/tender size.
Drop the fish in the flour, followed by egg and then bread crumbs.
Shaking off excess crumbs, lay the ling tenders on the tray and spray lightly with an oil spray.
Bake for 15-20mins until golden brown and cooked.
Serve with wedges of lemon and watch them disappear!
