Boiled pineapple fruit cake

Time for a little indulgence!

While cake is not exceptionally healthy, it's fine as an occasional indulgence. Just don't overdo the number of serves!


400g can of crushed pineapple

1/2 cup of desiccated coconut

125g margarine

375g (2.5C) of mixed dried fruit

1 cup sugar

2 tsp mixed spice

1 tsp bicarb soda

Pinch of salt


1 cup self raising flour

1 cup Plain flour

2 eggs beaten


Boil the first eight ingredients together in a saucepan.

Allow to cool. (if it is not allowed to cool it will curdle the egg)

Add sifted flours and beaten eggs

Place mixture in 18cm square, lined tin.

Cook for 1 – 1.25 hours at 160 C (shorter time if fan forced)

Test with skewer.

Leave in the tin for 5 mins, then turn onto a rack to cool.
